Bittersweet and moderately spicy, our pimentón is a blend of Jaranda and Bola peppers grown and smoked in Extremadura, Spain.
Many countries produce versions of smoked paprika, but only Extremadura has been granted the Designation of Protected Origin for the uniqueness and historical tradition of its pimentón de la vera. Students of Mexican history will recognize Extremadura as the home of the extraordinary, for better and worse, conqueror, Hernán Cortés.
You can sprinkle it into your favorite dishes but try making a paste of the pimentón and garlic by frying it in olive oil. This is the base and you can build from there with tomatoes, peppers, etc. Garbanzos and pimentón are an especially fine combination. Our prediction is that you will add this to most everything.
